wheatListenelement 1Triticum vulgare. Wheat in botany is a whole group of grasses of the family Triticum. Not only the different types of wheat are part of this family, but also spelled, emmer, einkorn and kamut. The decisive factor for wheat is its adhesive content and its adhesive quality (ratio of glutenin and gliadin). Only the gluten whites make the wheat ready to bake and allow loosely and well-formed breads.

SpeltListenelement 2Allemannenkorn, Spelzweizen, Triticum aestivum ssp. spelta. Spelled belongs to the grain variety of wheat. Its grains are brownish, oblong and tapering at both ends. The spelled harvested before full ripeness (and harassed) is sold as a green core. From a nutritional physiological point of view, the grain is more valuable than wheat. It contains more protein and minerals, but has less favorable baking properties.

They account for about 15% of the bulk of the grain and serve to protect the underlying grain constituents (aleurone layer, meal body, seedling). The surface layers are particularly high in fiber (87% of the grain's fibers), contain many vitamins, fats (30% of all fats of the grain), minerals (54% of the grain's minerals) and dyes.

EinkornTriticum monococcum. Einkorn is one of the oldest species that has been cultivated from wild wheat. The exact country of origin is controversial. He certainly comes from the Near East region. Einkorn only forms the grain that gives its name to each spike. Since the yield is much lower, it was displaced by wheat as the main crop.

In central European latitudes, it only entered the agricultural sector about 5,000 years later (Neolithic period). She belongs to the family of sweet grasses.

milletMillet is a collective term for a spelled grain with several genera. A distinction is made in sorghum sorghum and millet bushes. The former are far more productive due to the larger grains.
