Spelt
Allemannenkorn, Spelzweizen, Triticum aestivum ssp. spelta. Spelled belongs to the grain variety of wheat. Its grains are brownish, oblong and tapering at both ends. The spelled harvested before full ripeness (and harassed) is sold as a green core. From a nutritional physiological point of view, the grain is more valuable than wheat. It contains more protein and minerals, but has less favorable baking properties.
